Dried Shredded Coconut Glutinous Rice Cake
Dried shredded coconut glutinous rice cake is made with sticky rice and coconut by people in Hainan. Indigenous people would pick old coconuts from the trees, shred the coconut flesh with a rake, stir-fry them with some brown sugar, and then set them aside. When the sticky rice is steamed, people put them into a wooden mortar and pound it into a rice cake. Finally, wrap in the shredded coconut that has been fried to complete.
