Zaopo vinegar
Zaopo vinegar (糟粕醋) hot pot is a popular dish that Hainan people often eat all year round. Because the color of the soup looks like that of Thailand's Tom Yum Goong, it is also known as the Hainanese version of Tom Yum Goong hot pot. In fact, the two taste quite different. Originated in Puqian town, Wenchang city, Hainan, Zaopo vinegar is made from the fermentation of distillers’ grains produced in the brewing process. It is usually sold in local markets at an affordable price. Zaopo vinegar hot pot mainly includes conchs, sea fish, shrimps, seaweed, beef. Having a bite, you can enjoy the strong garlic flavor, with sour and spicy tastes.
